Nourish You: Power Bars Recipe with Emma Wylie from Elo Wellbeing

Whether you’re navigating a day of solo parenting, feeding on the go, or chasing after little ones, these homemade Power Bars are here to keep you fuelled. Packed with protein, healthy fats, and long-lasting energy, they’re the kind of wholesome snack you’ll reach for every time. 

Created in collaboration with Elo Wellbeing as part of our Nourish You series, this family-friendly recipe is rich in nutrients and big on flavour- ideal for postpartum recovery, lunchbox extras, or an anytime energy boost.


Ingredients:

1 ripe banana, mashed

½ cup nut butter

1–2 Tbsp honey (to taste)

2 eggs

1 tsp vanilla extract

1½ cups rolled oats

1 cup chopped nuts or seeds

70g dark chocolate, roughly chopped

⅓ cup almond meal or flour

1 scoop protein or collagen powder (optional – vanilla, salted caramel or unflavoured

1 tsp cinnamon

½ tsp baking soda

Pinch of salt

Method:

  1. Preheat oven to 180°C and line a medium baking dish with baking paper.
  2. In a large bowl, mash the banana. Add nut butter, eggs, and whisk until smooth.
  3. Add oats, almond meal, protein powder, cinnamon, baking soda, and salt. Mix well.
  4. Fold in chopped nuts and dark chocolate.
  5. Transfer the mixture to the baking dish. Press down evenly using a spoon or spatula.
  6. Bake for 18–22 minutes until golden and set.
  7. Cool completely, then slice into bars
    Store in the fridge for up to 5 days or freeze for later.


Make It Nut-Free:

Swap nut butter for tahini, almond meal for regular flour, and use a mix of seeds like hemp, sunflower, pumpkin, and sesame instead of nuts.
