Nourish You: Winter Warmer Chicken Soup with Emma Wylie from Elo Wellbeing

This winter, we’re so excited to partner with Registered Women’s Health Nutritionist Emma Wylie from Elo Wellbeing to bring you Nourish You. Nourish You is our exclusive series designed to support mothers & families who want to eat well, feel good, and keep things simple in a life that can sometimes feel less than simple.

First in the series is our Winter Warmer Chicken Soup recipe. A slow cooker favourite designed to warm your body, soothe your soul, and simplify weeknight dinners. It’s packed with protein, loaded with veggies, and easy to customise with whatever you have on hand.

Whether you're walking in the door after work or chasing toddlers through the witching hour, this is the kind of meal that means you don’t have to think twice. 

 

Winter Warmer Chicken Soup 

Serves 4

Ingredients:

1L chicken broth or vegetable stock
2-3 cups water (depending on slow cooker size & consistency preference)
3-5 bay leaves
1 Tbsp black pepper (optional)
500g grated root veg (try kūmara, potato, parsnip, pumpkin)
½ cup split peas or red/yellow lentils
½ leek, thinly sliced
4 celery stems, thinly sliced

4-6 skinless, boneless chicken thighs
1 head broccoli, chopped
2 courgettes, grated
4-5 stalks silverbeet or cavolo nero, chopped (or spinach)

Method:

  1. Add stock, water, bay leaves, pepper, grated root veg, lentils, leek, celery, and chicken to the slow cooker.
  2. Cook on low for 6-7 hours or high for 3-4 hours.
  3. In the final hour, stir in broccoli, courgette, and greens.
  4. Before serving, shred the chicken using two forks and remove any visible bay leaves.
  5. Season to taste and enjoy.
